EASY pumpkin chocolate chip pancakes

i was in the mood to experiment with pancakes this morning. at first i was going to try banana chocolate chip pancakes but my husband doesn't really care for banana so i decided to try pumpkin (which he loves). while in know pancakes made from scratch are probably the best way to go i decided to cheat a little and use bisquick. this is what makes these pancakes so easy!
*maybe i'll try the banana ones at another time.

Easy Pumpkin Chocolate Chip Pancakes

Bisquick (and egg and milk according to directions on box)
1/2 cup canned pumpkin (don't use pie filling)
2 tbsp sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/3 - 1/2 cup chocolate chips (depending on how chocolaty you want them)

whisk all ingredients together in a bowl. Pour onto hot griddle app. 1/4 cup per pancake. These pancakes fluff up quite a bit when you flip them so i put a little pressure on them once i flipped them to make sure the inside got done. otherwise the outside might get really dark before the inside finishes cooking. serve with pure maple syrup and enjoy.

happy cooking!

goat cheese stuffed turkey burgers w/ basil butter garlic cream sauce

so this idea came to me when i was trying to think of something to do with the goat cheese i bought from costco. i love goat cheese and am always looking for new ways to use it. i saw a recipe for grilled cheese stuffed turkey burgers and that sparked my interests so i thought i would experiment. thankfully they were a success.

here you go....

1 lb ground turkey
1/4 cup worcestershire sauce
italian breadcrumbs (enough to help hold your patties together)
1 egg
salt and pepper
goat cheese

mix all ingredients but the cheese in a bowl. divide into four equal parts. take half of one of the parts and form patty. place cheese in middle and mash the other half on top to form a whole patty. repeat with the rest of the meat mixture. grill in grill pan until turkey is no longer pink.
*reminder: ground turkey is a lot mushier than beef so let it cook for a while before you flip it.

basil butter garlic cream sauce

melt app half stick of butter in skillet. add 1 tsp minced garlic and some chopped fresh basil. slowly add heavy cream, stirring, until a nice thick sauce forms. salt to taste.

i served these with baked sweet potato fries sprinkled with cinnamon and sugar.

happy cooking!

and so it begins

in my attempt to become a better and more avid cook i thought i would start experimenting in my kitchen. i love to read food blogs and get ideas off of them but i also think it's fun to try and create something of my own. i thought that i would post my successes (and failures) on here and chronicle my adventures in the kitchen. and so it begins.........
